In this video, I’m sharing my recipe for Liu Sha Bao – the custard steamed buns with lava salted egg filling. English instruction.

* INGREDIENTS
A. Custard fillings
– 5 salted egg yolks (65 – 75 gram) (*)
– 45 gram condensed milk
– 50 gram unsalted butter – room temperature (very soft)
– 50 gram coconut milk
– 30 gram dry milk powder

B. Bao Dough
* Part 1:
– 250 gram all purpose flour
– 1/2 tsp instant yeast
– 1/2 tsp sugar
– 135 – 145 ml milk (start with 135 ml, add extra if dough is too dry)
– 30 ml oil

* Part 2
– 75 gram flour
– 1 egg white (30 gram)
– 30 gram sugar
– 10 gram dry milk powder
– 4 gram baking powder

(*) Salted eggs can be found in Asian groceries. If you can’t find them, you can use normal boiled yolks and some salt.
